With this tutorial ^^^ in mind where it teaches how to obtain a GUI for your droplet, the question is written in the title.

I like GUI's and do not enjoy having to do everything from the terminal, specially copying files over other folders having to type the entire path structure (ugh).

Will the performance drop kill the benefits of a GUI?

Yes, installing an additional piece of software will affect performance. This will vary on the software and services you install. The easiest thing to do is use ssh / sftp for file transfer. It's just about getting comfortable with it. Installation of additional services that allow internet access is also going to leave more open security holes.

You have to consider GUI interfaces to your server services as yet another website your server is tasked with handling. This includes Plesk, cPanel/WHM, VespaCP, etc...

The idea with droplets are to squeeze the most amount of power out for your task or website as possible. If that is your choice to run cPanel + WHM + Your Website(s) then thats your choice

But if you setup everything without the GUI you get that much more!
