Hello, yes, I know there’s a lot of solutions out there but, I would like to know if it’s possible to make a secure email server on a Droplet with Ubuntu. Maybe also with openpgp.

A “secure email server” is a bit of a misnomer. Email, by design, is not encrypted or secure. It was designed in a day where no one ever considered that folks would try to do “bad things” on the internet.
Running an email server is no easy task. There is a big reason that there are lots of email service providers out there - running a mail server and keeping it working always is a pain in the butt!
