I have been derelict in documenting access to the droplets on my account. I need to document this important information as soon as possible. I am worried about terms like “Shut Down” droplet etc not knowing if I will cause a major problem.

Hello,
If there is no other way for you to find out the current login details, the best way of getting access back to those droplets is by following the steps here:
https://www.digitalocean.com/docs/droplets/resources/lost-ssh-key/
Note that this would indeed require a server restart, so I would recommend scheduling a maintenance window during non-business hours.
Hope that this helps. Regards, Bobby
