Setting up the APPS was straightforward giving me a https://appname.ondigitalocean.app/ when I add a live app URL HTTPS no longer works. How Does one add a LetsEncrypt Cert to the APP? The only thing that I succeeded was a redirect from my domain.

In case you are already using the DigitalOcean name servers, this should all be done automatically as described in the documentation here:
https://docs.digitalocean.com/products/app-platform/how-to/manage-domains/
Alternatively, you could use the Cloudflare DNS which also comes with a global CDN and a free SSL certificate.
