You have a couple of options to be able to do the thing you’d like to do. The first, and probably easiest, is to setup a virtual host for each, and direct according to virtual host. A more complicated option which would certainly work would be to use a <directory> directive within Apache to direct just /phpmyadmin to the site. I’d suggest rather setting up a DNS record for ‘admin’ or something accordingly, and directing that virtual host.
