Hello,
as per documentation (https://docs.digitalocean.com/products/droplets/concepts/choosing-a-plan/#droplet-plans) there is a variety of Droplet types available for different plans. For example there are various Memory-optimized Droplets with different number of vCPUs from 2 to 32 (16 - 256 GB RAM). However while creating a new node pool I only have a single option for Memory-optimized Droplets available, namely the smallest one with 2 vCPUs. How can I request a Droplet with more resources?

What region is your Kubernetes cluster based on? And is it a new cluster that you are creating or are you adding a pool to an existing one?
Usually, once you select your Machine type (Droplet), then under the Node plan, you can also select the size of the Droplet to.
