My primary domain is set up in Dreamhost with a working website there. Is it possible for me to just host a subdomain in Digital Ocean?

Yes, it’s entirely possible and up to you. All you need to do is, create a subdomain and point it to your Droplet with DigitalOcean and that’s it. Now you can create a website for your subdomain without a problem.
