I created a file called sub.domain.com.conf in /etc/apache2/sites-available. Then I added the below:
<VirtualHost *:80>
ServerName sub.domain.com
DocumentRoot /var/www/sub
# ..any other config needed
<Directory /var/www/sub>
Order Allow,Deny
Allow from all
</Directory>
</VirtualHost>
And restarted apache. I can see that a sub.domain.com file has been generated in sites-enabled, but when I access sub.domain.com, the webpage is unavailable.
What did I do wrong?

Is there any more information you could provide? Did you set up DNS records pointing that subdomain to the IP address? Are you seeing any errors in /var/log/apache2/error.log ?
