We’re about to switch from a shared hosting provider to DigitalOcean. The current host is kind of slow and doesn’t allow MySQL triggers. It looks like it will be possible to create triggers but we just want to make sure before we make the switch.

Droplets are not shared, you may trigger as you wish. Assuming you install a version of mysql that supports triggers.
Of course, you run your own server. You can do whatever you want with it.
