I recently set up a Directus install on a droplet with one-click-install, and out of the box the installer adds a single project and is linked to a db instance for the droplet.
The Directus documentation () states that you can have multiple projects linked to one app instance - is this possible within the droplet, or will I need to create a new droplet for each Directus project I create?
If possible - is this there any documentation on how I might get this working?

You can host multiple sites/applications on your droplet, there is no restriction on this.
Your only concern will be the performance if your applications require significant amount of memory or cpu in order to run.
Depending from your setup and what type of web-service is used you will need to configure a virtual host for exmaple with Apache
