My client wants to test out GSuite for one email ID before jumping ship from Outlook to Google Apps for the web. I realize that you can have only one email provider per domain, but is there any way to work around this? Thanks!

There is no reasonable way to work around this. Technically you could develop a plugin for an open source MTA, something like Haraka might be good, but there’s nothing that currently exists which would reasonably perform the function to any equivalent degree as having your MX records set to the mail host in question.
