I was wondering if it was possible to count the number of directories in an environmental variable and if possible what command would do so in linux

Would you mind clarifying this a little bit, are you referring to 1 specific environment variable that contains a list of directories? If so can you share an example of that environment variable so I could advise you further?
If you want to get a list fo all environment variables you could use the printenv command.
