If I create a snapshot, then destroyed the Droplets, and finally created a new droplets with more disk space using the snapshot I will continue to have the previously assigned IP?

If you do it quickly, yes. DO holds the IP for you for these sorts of operations for a limited amount of time (measured in a few minutes, not hours and not days)
