I want to migrate existing wordpress sites to a new single droplet which seems a bit complex to me. Can I simply create a new droplet with one click wp installed and migrate sites using UpdraftPlus backups? I am looking for the easiest and smoothest method of doing that.

If you’re planning to host two WordPress sites on a single droplet you can choose a droplet that will match your needs (Disk, CPU and RAM) and then quickly deploy it. I will recommend you to go with Ubuntu 18.04 droplet.
You can host multiple websites on one droplet by adding multiple Apache Virtual Hosts.

As for the WordPress migration process, it’s not complex. You need to migrate the files using ssh (rsync or scp) or via sFTP and then copy your database as well. There are also WordPress plugins you can use in order to do that, plugins like Duplicator and All in one WP migration.
