For the project I’m working on I need quite a bit of disk space, but don’t need as much processing power or RAM. Is it possible to customize a droplet by adding just disk space?

@mark Correct. We currently do not support custom disk sizes, the largest you can get would be 960GB at $960/mo.
Unfortunately we can not customize the plans that we offer. If we did offer custom plans where you could independently select your resources it would actually be more expensive than just selecting the plan that includes the one resource that you need.
So, I guess there is not practical way to run a large (1TB+) database solution on a single instance with DigitalOcean. Is that correct?
