Was wondering if it were at all possible to use the Digital Ocean 1 Click WordPress App to create a droplet that has more than one WordPress installation or is the only way to achieve this to manually do it?

Yes, the 1-Click installation would spin up a new server each time, but you could follow the steps from this video on how to add additional websites to the same server:

You can host multiple WordPress sites on the 1 click WordPress application from the marketplace, but you’ll have to configure that manually.
The process is really simple, all you need to do is to spin up the droplet via the app marketplace and then manually add the virtual hosts for the other sites.
