Hi, If I create a droplet and install say Ubuntu with a LEMP/LAMP stack, then I feel that it doesn’t suit what I need, can I delete that droplet and just create a new one?

Yep, exactly. Just be careful, because any work you’ve done on that droplet will disappear! But if you’re just trying out an install and realize you want to make a change, just boot up another droplet and delete the old one!
