I’m deploying an jitsi instance with one click app, and want to add more than one domain to my jitsi. I was trying to create a new site, and then point it to jitsi, but i’m stuck on certbot, when creating certificate it conflict with the domain created with the initial script. Is there one easy way to do all this?

In order for certbot to work, your domain name needs to be specified in your Nginx Server Block as described in step 2 in this tutorial here:
