We have a client requirement where we need to provide proof of deletion/scrubbing/destruction of some sensitive data. In case if we choose to destroy the droplet, is there a way we could get the said ‘proof of scrubbing’ or a certificate that the sensitive data has been completely scrubbed off the DO server?

I’m not sure DigitalOcean will provide you with such a certificate but I might be wrong. I’ll recommend contacting the support on that matte to see if they can suggest you something.
