Amavisd-new can be setup to sign dkim so no need to complicate it. Never used opendkim so it might not be an issue.
I have found postgrey, postscreen usefull in blocking most incoming spam emails. Both have small issues. Also make sure you are checking spf records. Not sure how effective it is but every little bit helps.
Postscreen can be somewhat tricky to get the right balance. Its more or less trial and error.
Postgrey can be a pain if you are expecting something in a hurry. It delays new mail from being delivered forcing the server to send it again. Idea is most spammers won’t bother and just move on.
