Is it possible to use full disk encryption on an Ubuntu 14 droplet?
My understanding is that it’s not possible to use full encryption after installation. While it is possible to encrypt user folders and other selected areas.
I’m referring to the option of full encryption that is asked during installation of Ubuntu.

Not currently. While you could set up encryption on your /home directory it is not possible to enable full disk encryption on Ubuntu 14.04 droplets.
Ubuntu 15.04 droplets have user-managed kernels (meaning that it boots directly to the kernel within your filesystem) While it would not be officially supported it may be possible since you would be able to resize/create partitions but to the best of my knowledge this has not been attempted by any users.
