Hi! I have a Standard plan Droplet with 640GB SSD, where majority of that space sits unused. I could use more CPU power so I would like to switch to General Purpose or even CPU optimized plans but these have a lot less disk space. The docs say it’s not possible to downsize disk space. Is it possible then, to change the plan for the droplet to General/CPU optimized? Or create a new droplet with the desired plan using a snapshot of the original droplet?

As you create and use your Droplets, you may find that the plan you’ve chosen for any given Droplet is above your needs and downsizing is appropriate. For data integrity reasons, we don’t provide the ability to downsize a Droplet through the control panel, but you can still switch to a smaller Droplet using common migration strategies.
You can create a backup of your droplet by taking a snapshot. Without a backup, you risk data loss if anything goes wrong.
In order to migrate your data you can use a lot of tools like sFTP clients or migrating the files via ssh using rsync and scp
