In my project for example I write a JSON file using python will the JSON file data be stored or deleted after the dyno restarts? I don’t have a clue about the Kubernetes cluster and was wondering will the JSON file be lost after a dyno restart similar to Heroku. Or is Kubernetes Completely Different?

What I would personally do is to use an object storage to store such files persistently. You could use the DigitalOcean Spaces for that:

Alternatively, you could use a PVC with a block storage as described here:
https://docs.digitalocean.com/products/kubernetes/how-to/add-volumes/
