After spinning up a new droplet & hardening the server a bit, what would be the next steps before migrating 50 random websites over? Just installing a lamp stack? I’m looking for an outline to follow that would be secure and flexible for the most part.

I would recommend cPanel, However this is not free, if you are looking for something free just hit up a google search and search for a free control panel.
Yeah and since you are going to have 50+ websites I suggest you to use a control panel like VestaCP.
