I also wish to upgrade my 32-bit server to 64-bit. By “delete server” do you mean ‘destroy droplet’? Will ‘destroy droplet’ also destroy my snapshots? Could I also use the ‘rebuild droplet’ choosing Ubuntu 14.04.3 x64 and ‘rebuild from image’?
create snapshot
delete server to release IP and confirm deletion
create new server of the desired size in the same datacentre. in the “select images” section switch to “my images” and select your snapshot.

A snapshot image is a complete copy of your droplet’s disk. This includes the operating system. The only way to move from a 32bit to a 64bit OS would be to start with a new droplet (or rebuild from a stock image) and then manually copy over your files. Restoring from your 32bit Ubuntu snapshot will result in an exact copy of your current 32bit droplet.
All droplets run on a 64bit architecture so the only difference is in the operating system loaded onto it.
