It seems like nginx and unicorn would be necessary. I’m just wondering very generally what the difference in the two ROR one click apps are. Thanks!

One of the RoR one-click images deploys Ubuntu 14.04 while the other deploys 16.04. Last I recall, they both deploy the same stack, but the one deploying 16.04 is more up to date since 16.04 is the latest LTS (Long-Term Support) release of Ubuntu – 14.04 will be dropped from LTS very soon as the time frame for support is reaching EOL (end of life).
No problem, and yes, they’ve posted a ton of guides for Ubuntu 16.04 :-).
If you take a look at the URL below, it’ll take you to the Tutorials section which searches on Ubuntu 16.04. From there, if you modify the search, you’ll find pretty much anything you need ranging from setting up Apache and NGINX to Initial Setup/Security.
