The biggest limiting factor (usually) for latency is the speed of light so physical proximity is key. With an audience on both sides of the Pacific you would likely benefit from using either the San Francisco or Singapore data centers.

Hello there,

I’ll also recommend conducting the speed test tool before making a final decision. We do not have a data centre in Australia yet, but this idea has been shared already few times in our community and you can vote for it.

The best thing to do would be to head over and add your vote to it, as well as add any additional information in the comments for exactly what you’d like to see implemented!

You can also use a CDN in order to speed up your site content for visitors in Australia.

Hope that helps!
