In order for Postfix to work, I think my droplet needs to have a fully qualified domain name — it doesn’t. Will the web site I have hosted on my droplet experience any downtime if I rename the droplet?

No, renaming a droplet will not cause any downtime. It simply updates its hostname in our database and the the IP address’s PTR record.
