I don’t seem to have the ability to resize a Droplet into a High CPU Droplet. Is this something that is planned for the short term? Or do we need to tear it down and recreate it?

Just noticed that, and DigitalOcean could have an error message other than “Something wrong happened”…
At this time you would need to snapshot the droplet and then re-deploy it on a high cpu droplet. There is no way to “resize” between standard and high-cpu droplets.
