Other than installing LAMP and pointing the DNS, what else is needed to get a website working on DO? I’ve used other hosting providers for websites and have never had to install all the technologies needed. Would it be recommended to still go with a more “traditional” web host? Other than hardware specs etc, what difference would there be to hosting a site on DO compared to another webhost?

Digital Ocean vs. Traditional Web Host:
cons: DO is your own server. As such, you will need to be mindful of security updates and configuring your own security. If the server crashes, you will need to troubleshoot and figure out what is happening. If you have issues with your website, you will need to troubleshoot and figure out what is going on
pros: faster and cheaper you can tweak your server to exactly how you want (no need to bother tech-support to plead for PHP updates) free static IP the education you will get is invaluable and can be used over and over again as you learn more about running a linux server.
