I want know how change ISO-8859-1 to UTF-8 automatically in all pages of my domain.

You can set the default character set for Apache either in it’s main configuration file or in an .htaccess file in your web root.
To use an .htaccess file, first navigate to your web root (by default this is /var/www/html) and then run:
echo 'AddDefaultCharset UTF-8' >> .htaccess
chown -f www-data:www-data .htaccess
Otherwise you can edit your httpd.conf (on CentOS/Fedora) or apache2.conf (on Debian/Ubuntu) to add the line:
AddDefaultCharset UTF-8
