So I bought a domain from 1&1 that wasn’t available to Wix or Digital Ocean. I currently have my domain DNS currently pointing to Wix. Which will be the homepage. I want to host a mumble off of a DO droplet. Would I just need to add DO’s name servers as secondaries along with the Wix? Then make a subdomain and point the DNS to my droplet?

There is no need to use multiple DNS providers to do this. You can simply create your subdomain on your existing DNS and point it to your droplet’s public IP address.
