I would like to host multiple Wordpress sites on a single instance. Preferably using Docker containers. I will create servers/droplets using the API from my own website and I’m looking for a way to create these docker containers programmatically using an API. The idea would be that my user creates a Wordpress instance by clicking a button on my site. However, I don’t see an API that can do this? Is there another way to achieve this?

While there is no direct API built into your Droplet’s OS to allow for this there are third party tools that can allow you to perform some functions remotely.
Internally we use fabric to remotely build our Application images on droplets without directly logging into them. It may provide a solution that you can build on.
