If I create a one-click Docker droplet, can I still connect (ssh) to the host droplet? Also, can that one-click droplet be used by cloud.docker.com?

The Docker One-Click app is very straight forward. It simply pre-installs the latest version of Docker Engine via their apt repository. It aims to let you get a Droplet with Docker up and running without having to do the repetitive task of installing it every time. You can SSH to the host as normal.
For Docker Cloud, you should launch Droplets from their web interface. Besides Docker, they also install an agent that allows their control panel to interact with the Droplet.
