Yum repositories seems to have some issues. Just deployed a droplet and as soon as I go ‘yum install mysql-server’ it gives me ‘No package mysql-server available.’

CentOS 7 (as well as RHEL 7) does not include MySQL. It instead ships MariaDB which a drop in replacement. You can install it with:
sudo yum install mariadb-server mariadb
