When can I add crypto as a payment method? I am a user in the UK and I don’t see it as an option.

As far as I know, at the moment, crypto payments are only available to a limited set of customers and regions. If you do not see it in your Billing settings, it means it is not enabled for your account yet. There is no public timeline for when it will be available more broadly, including in the UK.
For now, you will need to use one of the supported payment methods listed here: https://docs.digitalocean.com/platform/billing/manage-payment-methods/
If crypto support is important to you, your best option is to keep an eye on the billing page or reach out to support for account specific clarification.
