You can’t just change your IP address on your Droplet. In order to get a new IP address, you need to create a new Droplet, only then you’ll be given a new address and only for the newly created droplet.
What you can do is create a snapshot of your current Droplet, create the new Droplet with the new IP and restore the Snapshot on the new Droplet. If you are unsure how to use the Snapshot feature check it out here:

We only issue one IPv4 address per droplet, but we also issue up to 16 IPv6 addresses per droplet. You can read more about IPv6 here: https://www.digitalocean.com/docs/networking/ipv6/
As already mentioned you can take a snapshot of your droplet and then create a droplet from the snapshot, this will do the trick for you.
