I have an e-commerce site running on Wordpress (Woocommerce). Sometimes my website crashes out of nowhere. I can’t do anything. The page is not loading. Sometimes I even get 504 gateway time-out error. For performance I use a proven caching plugin with CloudFlare. Page speed seems fine. But I can’t understand the reason for these deadlocks. Can you guide me, is the resource insufficient?

Indeed it sounds like that it could be related to resource utilization. What I could suggest before increasing your resources is:
Try using a caching plugin like WP Super cache for example. That will reduce the overall server load.
Remove any plugins and themes that you are not using.
Try using Redis to store your PHP sessions, that way PHP would spend less time writing sessions on disk.
