I recently answered a similar question here:

What you could do is first setup your HTTP to HTTPS redirect:

server {
    if ($host = www.domain.com) {
       return 301 https://$host$request_uri;
    } # managed by Certbot


    if ($host = domain.com) {
        return 301 https://$host$request_uri;
    } # managed by Certbot

        listen 80;
        listen [::]:80;

        server_name domain.com www.domain.com;
    return 404; # managed by Certbot
}

And then setup the HTTPS redirect from the www to the non-www version:

    if ($host ~ ^www\.(?<domain>.+)$) {
        return  301 $scheme://$domain$request_uri;
    }
