I know that when you create a new droplet from scratch you have to protect it carefully (and manually)… BUT… Does it applies also to one-click-applications images, or are they “ready to use”?
AKA: do i need to configure firewall &co. in them?

Yes, it applies to One-Click applications as well. While none of them expose unnecessary services to the public (e.g. MySQL) or use weak passwords, you still need to disable SSH password login, set up a firewall, etc.
