I use my droplets for a latency-dependent service, and currently only the extreme East and Western United States are available. Are there any plans to implement availability in the central US? Say, Chicago, Dallas, or Kansas City?

There aren’t any plans on the roadmap at this time to open a datacenter in any of those locations.
We use UserVoice to help collect user requests and to gauge demand for features. There is an existing request there for a datacenter in the Midwest. You can add your vote to show support and subscribe to get updates.
