I've got my wordpress site up and running but would like to add more sites. Is it possible to do this on a one click wordpress install. I need to use ftp for installation purposes.

Yes, it is possible:

This tutorial shows you how to set up a new directory, how to grant the correct permissions, how to add content to a new page, how to turn on virtual hosting, and how to, if needed, set up local hosts. Virtual Hosts are used to run more than one domain off of a single IP address and allows you to run multiple sites off of a single DigitalOcean droplet. This tutorial describes how to set up virtual hosts with Apache.
Yes; but, as the old saying goes ... 'There's more than one way to skin the cat.'

Are you interested in WordPress Multisite or do you prefer multiple, but separate, WordPress installs?
I prefer the latter Pablo, and this is where I need the help.
I have set up virtual hosts in the past with no problems using sftp as my file transfer method but I would like to use plain old ftp i.e filezilla etc to transfer my files.
This is why I went with the one click install on my droplet because at least I'd have a site working.
I'm not sure which of the two is the better choice for ftp, proftp or vsftpd, anyway thanks for butting in and I hope you can tell me how to get this working.

Plain 'ole FTP should be your last resort. For more info. & links on installing vsFTP or proFTP, see What is FTP and How Is It Used?.

Where are you transferring your files, from (b/c SCP and/or rsync are more secure than FTP)?

This tutorial provides some information about FTP and includes some basic FTP commands. Additionally it includes links to the variety of FTP tutorials on the DigitalOcean site. FTP is a way to transfer files between hosts over the internet. It is especially helpful as a way to upload or download files to or from a site quickly.
You should really use SFTP all the time. FTP should *never* be used.
