I am thinking on choosing a $160/mo plan for small ESP startup. But my question is if I install postfix mail server on it, will I be able to have mail being sent through multiple IPs or it will only be sent from the IP that my postfix server is being hosted on (digital ocean given IP), and if so what solution do I have?

Currently a droplet can only be assigned one direct public ipv4. In addition to this you can also add:
1 - ipv4 public floating IP 16 - ipv6 public addresses 1 - ipv4 private IP
At this time it is not possible to add additional IPs to a droplet beyond these.
