I am just getting started with DigitalOcean and I haven’t made my droplet yet. I am wondering whether I should choose Ubuntu on its` own and install LAMP and Node, or whether it’s possible to select Ubuntu LAMP distribution then install Node to it as well.

Using a droplet with preinstalled applications and services just saves you some time. Nothing stops you to install and use any other apps on one-click images ;)
If you want to gain some knowledge on how web servers are setup, I recommend tha you spin up a plain ubuntu droplet and then follow one of the tutorials.
