The NS for my droplet ns1.digitalocean.com. ns2.digitalocean.com. ns3.digitalocean.com. Can I change it to ns1.mydomain.com? if yes how?

Yes, you can run your own nameservers by installing and configuring software to do so (e.g. PowerDNS).
Do you mean white label or custom nameserver? You can do so by creating a glue record in your domain registrar and point it to your host IP address.
