Can't access any edit in var/www/ via SFTP

How can I access to edit anything in that directory?

You need to allow your user to write to /var/www:

sudo chown -R youruser /var/www

So, does that mean that if my user is “root” - I can do “sudo chown -R root /var/www” ?
When I did it, nothing happened
