In all tutorials I find people using replications for their gluster setup. Is this really necessary with DigitalOcean where we have an uptime > 99,99%? What do you think?

Replication is important to prevent data loss. While 99.99% uptime might make this less of a concern if an issue does occur either with your droplet or with the GlusterFS daemon or networking on your droplet the issue would be much more serious without it.
