This is a simple question, but I’m more of UI than command line guy by a large magnitude. If I want to create a droplet for a small project and give a random Odesk developer access and then kill that droplet in a month with the access, what should I be doing for my own security?
I want them to have full access to that droplet but obviously my my digital ocean account.

You can add their SSH key to your droplet without giving them your DigitalOcean account credentials. See How To Use SSH Keys with DigitalOcean Droplets | DigitalOcean.
This way they won’t have access to anything once you destroy the droplet.
