Once I point my GoDaddy A record to my I.P. address on my server, what changes do I have to make to my server? GoDaddy handles my mail, so I cant change the Nameserver. I’ve got multiple sites on my DO server. Would I need to change my host files? What records/files on the DO end do I need to make?

Pointing A record to a Droplet IP is enough as of DNS settings. As you’re not using DigitalOcean nameservers, you’re not required to do any DNS config in DigitalOcean Cloud Control Panel.
If you want to host multiple sites, on server side, you need to configure VirtualHosts in case you use Apache, or Server Blocks in case you use Nginx for appropriate domain(s). Following tutorial should help you to do so: Apache - How To Set Up Apache Virtual Hosts on Ubuntu 16.04. Nginx - How To Set Up Nginx Server Blocks (Virtual Hosts) on Ubuntu 16.04.
