How do I change port 8069 to 80 in install Odoo with Docker?

Yes, it should be ok to do so. To do that you can follow the steps as described here:
When you get to the docker run command you just need to adjust the -p flag. You can change the value from -p 8069:8069 to -p 80:8069.
That way Docker would map the container to port 80 on the host and forward the traffic to the Odoo container correctly.
